Voilà starts with the people & Executive Chef Clive Fretwell has spent hours in the kitchen tasting, testing & then tasting some more to ensure you can create the same superb flavours & presentation that you can find in our brasseries. Clive trained with Raymond Blanc at Le Manoir aux quat’Saisons & was Head Chef there for many years before joining us as Executive Chef.
Our award-winning Head of Bar, Ray Weeks has years of experience in the industry & his attention to detail ensures that we use only premium spirits in our cocktails to ensure the cleanest, best flavours & be the perfect accompaniment to our dishes.
